Salted Fish Chicken

This is one of my favourite dish since young. Mal also loves this now that I have introduced it to him. It is so appetizing and easy to prepare, BUT only if you like salted fish. People who dislike salted fish will curse you for polluting the air when you cook this ;)

Only 3 main ingredients:

3 chicken drumsticks - chopped to bite size
sliced young ginger - about 2" thick, amount dpeends on how much you like ginger
salted fish in oil, bottle packed type - 2 slices
water - enough to just cover the chicken
for extra taste: 1.5TBSP oyster sauce + few drops of dark/thick soya sauce


First heat up a little oil and saute the ginger till fragrant. Add in the chicken. Fry till all the pieces have changed colour.

Push chicken to the sides and add in the salted fish. Fry a while, breaking the fish into tiny pieces, mix everything up and continue frying till very fragrant (at this point your tummy should be growling).

Next, add in the oyster sauce, dark soya sauce and water. Let it come to a boil, stir once then cover and let simmer on low heat.


Stir every now and then until the sauce has reduced to half. Taste and adjust accordingly by adding some soya sauce or more oyster sauce.


Once done, leave it for at least 30minutes before consuming in order to get the full flavour. Oh my, I'm hungry now just thinking about it :)
