Roast Chicken with Lemon and Rosemary Roast Potatoes - J.O.

Here's another roast chicken recipe, this time it's Jamie Oliver's. I like to roast chicken because it requires little prepraration time and you can just leave the chicken in the oven for at least an hour and not bother about it.
Jamie Oliver says to use a free range organic chicken but since I can't get any organic chicken, I've used the normal chicken from the market. I'm sure it would have made a great difference in taste and texture :)
Here's what I did:
• 1 chicken about 1.5kg
• sea salt and freshly ground black pepper
Clean and pat dry the chicken, then marinate chicken inside and out with a generous amount or sea salt and ground black pepper. Leave in the fridge for about 4-6 hours
• 3 big Russet potaotoes - peeled and chopped to bite sized chunks
•1 large lemon - washed
•1 whole bulb of garlic - broken into cloves


Bring a pot of salted water to a boil, then add in the potatoes, garlic, and lemon. Boil for 12 minutes. "Drain and allow to steam dry for 1 minute, then remove the lemon and garlic. Toss the potatoes in the pan while still hot so their outsides get chuffed up and fluffy – this will make them lovely and crispy when they roast." (direct from Jamie's instructions)

Next stab the lemon about 10 times and stuff it into the chicken along with the garlic and a handful of fresh thyme.

Pat dry the chicken with paper towels then rub with olive oil. Roast the chicken in preheated oven of 190°C for 45 minutes.

•few dash of dried rosemary
•8 rashers of smoked streaky bacon

I couldn't get fresh rosemary so I used dried rosemary instead. It sure made a lot of difference aroma wise.

After 45 minutes, remove chicken to a plate and toss the boiled potatoes and rosemary leaves in the roasting tin. Then place the chicken back onto the tin surrounded by the tossed potatoes. Lay the bacon in single layer covering the chicken breast. Roast for another 50minutes.
I covered the wing tips with foil to avoid burning them


Note: My chicken and potatoes came out not brown enough... so I increased the temperature to 210°C and roasted them for another 20 minutes. I kept the bones for making soup the next day and the chicken breasts for sandwiches :)

A Trip to Port Klang Jetty

About 2 months ago, on Merdeka Eve, Mal decided to bring us to the jetty in Port Klang. I for one have never been to Port Klang jetty. Since sunny boy loves boats and water, I agreed to make a trip there.

First impression of the jetty... "Wah so small and old" :) "Where do all those ferrys and boats go?" "Why so many foreigners from our neighbouring countries more than Malaysians?" And so Mal told me that people travel to and from Pulau Ketam (known for their fresh seafood) everyday. It takes about 1.5 hours to get there, and many people do that just for a seafood dinner.


We spotted a boat parked at the side. Mal went in with sunny boy and sat for a while. Then one uncle in the boat gave sunny boy 2 duku langsat.

Hahah see how he's eating the duku... first time eating it...



Next, Mal went down to where the ferry is...

Asam Pedas Lemak Ikan Bawal

Direct translation from title is "Sour-Spicy-Rich Black Promfet". A recipe from "Kompilasi Masakan Ikan Laut". There are many recipes from this book that I have tried and will try.

I have been cooking this more than 3 times in the last couple of months. It's really easy and the sauce is so appetizing that I can eat it with rice alone :)

Here's the recipe which I have made slight changes to:

Ingredients:

3 lemongrass - smashed
1 stalk daun kesum (laksa leaves) - leaves picked

300ml coconut milk - I used a box of Ayam Brand coconut milk (200ml) mixed
with 100ml water

1 black promfet - cleaned and pat dry

Slice fish into 3 sections, then fry till golden brown


2cm belachan - toasted and mix with 2TBSP water
100ml asam jawa water

Ingredients to pound/blend:
8 dry chilli - soaked and deseeded
4 cloves garlic
2" ginger
2" tumeric (kunyit)
2" galangal (lengkuas)


Method:
Heat about 2TBSP oil and fry the spice paste for about 2minutes till fragrant.
Add in the tamarind juice and coconut milk. Mix well. Then add in the lemongrass, daun kesum and belachan water.
Let it come to a boil and simmer for 10minutes. Add in the fried fish and 2 pinch
of salt (or to taste).
Mix well and simmer for a while more. Remove the lemongrass and duan kesum and dish out.

Note: The original recipe includes one stalk of bunga kantan (torch ginger flower), which I have omitted the many times I made this. Also the fish is not supposed to be fried first. I like to fry it so that it doesnt taste/smell fishy.

Euro Fun Park at AEON Jusco

Euro Fun Park is here in Klang Bukit Tinggi, right at the AEON Jusco open car park. It's been such a long time since I went on thrill rides and joy rides ;) We saw the set up of the fun park from the very beginning. Sunny boy kept telling us to "check it out" every time we pass by Jusco (fyi Jusco is only a minute away from our house). They are only open at nite starting from 6pm-12.30midnite if I'm not mistaken.

And so couple weeks ago, we brought sunny boy there for his first experience of a fun park.


The Euro wheel, the center of attraction, possibly the slowest rides of all. Mal had a headache while sitting in it. It goes a few rounds, and stops a few times... kinda of boring for some. Costs RM6 per head

This is the Challenger...not for little ones. We gotta try this out w/out sunny boy next time. Looks pretty scary. RM8 per head

This is Super Jet. RM4 per head. I went on this with sunny boy. You can control the spinning of your seat and going up and down. Fun ride :)

The Sky Rider. You sit on a chair held by two long chain, and the thing just spins faster and faster. .... RM8 per head. Looks too thrilling for sunny boy...

The Samba Balloon...RM4 per head. Mild merry-go-round but goes up and down as well. Mal oso got a headache from this ride :(

Sunny boy's favourite ride... the Formula 3000. RM4 per head. Moving on tracks, the vehicle goes up and down hill and makes a quick sharp turn. See the last pix of him... suddenly he got panicked :)

The Battery Car...RM6 per head. Mal had to sit with sunny boy... coz it's kind of like a bumper car, dangerous oso la for him ;)
Roller Coaster for children RM4 per head. Very fun...
There are a number more thrilling rides which Mal and I will have to try out w/out sunny boy. Don't go after you have eaten...some people end up feeling nauseous and actually throw up, or like Mal, get a headache and can't enjoy the rest of the rides ;)
